- Single-farm origin: Every jar comes from Chesterhaven Beach Farm on Maryland's Eastern Shore — Kara's bees, Kara's flowers, Kara's harvest. There is no blending, no mystery sourcing, and no filler.
- A very short window: Black locust, fruit trees, wildflowers, and lavender don't all bloom at the same time for long. Kara times the harvest to catch that overlap at its peak, which is why the flavor is so concentrated and why the honey may sell out before the season ends.
- Floral, not perfume-floral: The flavor is bright and pollen-forward — the kind of floral that tastes like actually being outside in May, not like a candle. Sweet, but with enough complexity to hold its own next to strong cheese or savory food.
- Raw and minimally filtered: Nothing is added and as little as possible is removed. Natural pollen, enzymes, and character stay in the jar.
- May crystallize over time: That's what real raw honey does. It's not a flaw — it's a sign. Warm the jar gently in hot water to bring it back to liquid.
